Vanilla Maple Cacao Nib Macaroons

INGREDIENTS:
» 1 ½ cups dry almond meal or almond flour
» 3 cups unsweetened shredded coconut (approx. one 8 oz. package)
» ½ cup raw cacao nibs
» ¾ cup real maple syrup
» ½ cup melted coconut oil
» 1 ½ Tablespoons vanilla
» ½ teaspoon salt

DIRECTIONS:
» Mix the dry ingredients
» Separately, mix the wet ingredients
» Combine the wet and dry ingredients
» Form into tight balls and line on a cookie sheet

Using a mini ice cream scoop, this makes about 2-3 dozen. They're almost raw.. I put them in the oven at 200 degrees for about an hour with the oven door open to dehydrate. Enjoy!
