Dragon Fruit Raspberry Coconut Milk Ice Cream
/There are few foods as interesting on the outside or as shockingly hued on the inside as the fuchsia-colored pitaya! When they’re in season, I can’t pass up the opportunity to make something yummy that highlights the beauty of this fruit.

Ingredients:
» 1 can full fat coconut milk
» 1 medium dragon fruit (pitaya), peeled
» 1 cup fresh or frozen raspberries
» ¼ cup raw agave
» ½ teaspoon vanilla extract
Put all ingredients in a high-speed blender. Blend until smooth, then transfer to an ice-cream maker.
Freeze. Wait for it… ❄️ Enjoy!
