Green Prebiotic Protein Smoothie

This is one of the recipes I created for my final project for my Essentials of Superfoods course through Matthew Kenney Culinary Academy (now called Plantlab). It's nice and light (no banana, no nut butters) with prebiotic benefits from the Lucuma, and also plenty of protein from the coconut, hemp seeds and, surprisingly, the spirulina!

Green Prebiotic Protein Smoothie

• 1 cup frozen pineapple
• 1 cup spinach, packed
• 1/2 cup fresh young Thai coconut
• 1 cup coconut water
• 1 Tbsp Lucuma powder
• 1 Tbsp hemp seeds
• 1/4-1/2 tsp Spirulina
• 1 tsp agave nectar (optional)

Blend until smooth in a high-speed blender.
